Baba is an Italian pastry produced in the Italian Region called Campania. The baba is a sweet baked dough with yeast of beer, typically Neapolitan pastry. Its diameter can vary from 5-7 cm up to 35-40 cm. It’s also can be divided into two and filled with chocolate, cream and rum. Historical Background: The baba is a derivation of a sweet Polish pastry sourdough which is called Babka ponczowa, “sweet grandmother” (from Babka, “old”) that has a similar round shape with the cream in the middle as in Italy.
