Scamorza is a pasta filata (spun cows milk) cheese from Puglia Italy. Pear shaped, with a short neck. This cheese is aged for a couple of days, has a chewy, stringy texture. It is available in smoked (affumicata) or plain (bianca).Often under the rind the layering overlapping structure is visible, the fragrance is delicate and the taste is sweet or slightly savory. The Scamorza “Affumicata” after the smoking-process exposure acquires a tawny color and a delicate smoky aromatic flavor and a delicate unique taste. Made from Cow’s Milk.
