Product Information

Rolled unsmoked Pancetta  is made from Italian pork belly, it has been trimmed and hand-salted as per the traditional recipe, cured with salt ,pepper, nutmeg, and thyme.  Then rolled into a log and hung to dry for a couple weeks rather than being smoked. It’s typically thinly sliced or diced and then sautéed to add complexity to other dishes
