It’s the monks of St.Columban who brought this small olive to Taggia which gives a yellow oil and smells of ripe fruit with hints of fresh almond and lettuce. The Taggiasca lives in small terraced valleys, the result of man’s patient work. They are harvested by hand, with hard work. In return they give a sweet oil, never bitter. A little gem of delicate elegance.
This is where the Alps dive into the sea, in the northwest of Italy. Granite rocks fall into the Mediterranean Sea, creating steep cliffs. In this region man has stolen the land to the slopes and built the typical ‘terraces’. Right here, watching over endless landscapes overlooking the horizon, lives the Taggiasco olive tree: serious, shady, rooted, with a branch towards the sea and the other to the mountain.
